Özet Chitin is a polysaccharide composed from N-acetyl-D-glucosamine units. It is the second most abundant biopolymer on Earth and found mainly in invertebrates, insects, marine diatoms, algae, fungi, and yeasts. Resources of chitin for industrial processing are crustacean shells.In this study, freshwater crab (Potamon potamios, Olivier 1804) nonevaluated economically was used to obtain chitin-chitosan. Chitin-chitosan was extracted with modified chemical method. Production of chitosan involved demineralization, deproteinization, decoloration (chitin), and deacetylation. Grinded shell was obtained 60% after boiling, drying and grinding processes.Chitosan yield of crab shell was determinated as 4,65% from grinded crab shell after demineralization (yield 34,32%), deproteinization (yield 7,25%), decoloration (yield 6,83) and deacetylation processes. Moreover, freshwater crab stock was estimated with c.p.u.e. data in Egirdir Lake for calculation of quantity of chitosan. Population estimation was determined between 13,9±1,65 and 23,86±2,54 tonnes.This study was supported by TUBİTAK (Project no: 107O511)
