BROWSE_DETAIL_TAB_ABSTRACT Egzos gazı, fabrika dumanı ve sigara dumanında bulunan zehirli bileşiklerden en çok bilineni polisiklik aromatik hidrokarbonlardır. Bu bileşikler asfalt ve katranın yapısında bulunur. Kömür katranı içeren deri kremleri ve kepek önleyici şampuanlar düşük yoğunlukta PAH içerir. Ham petrol, benzin, gaz yağı, mazot, ağır petrol gibi rafine edilmiş ürünler de PAH içerir. PAH’lar ile kirlenmede toprak, su, atmosferik kirlenme, gıdaların işlenmesi (tütsüleme) ve pişirme çeşidi (kızartma, mangal kömüründe pişirme) rol oynar. PAH’lar lipofilik yapıları sebebiyle gıda maddelerinde özellikle yağ kısmında birikirler. Dokularda biriken PAH seviyesi, alınan PAH miktarına, bileşiğin alınış yoluna ve şekline ve PAH metabolizması uyarıcılarına bağlıdır. PAH’lar DNA gibi makromoleküleri etkiler ve çeşitli doku ve organlarda zararlı etkilere sebep olurlar.
The more known compounds that founds in the exhaust gases, industrial emissions and tobacco smoke are polycyclic aromatic hydrocarbons (PAH). These compounds are found in the blacktop and creosote. Skin creams and anti-dandruff shampoos that contain coal tars contain low levels of PAH’s. Refined products such as crude oil, fuel oil, kerosene, gasoline, heavy oil also contain PAH. Soil, water, atmospheric pollution, food process (smoking) and cook type (frying, barbecue) take parts in pollution with PAH’s. PAH’s accumulate in lipid components in the food chain due to their lipophilic nature. The level of PAH’s that acumulate in the tisues depends on the level of PAH’s that obtains, the route and way of taking and stimulants of PAH metabolism. PAH’s affects macromolecules like DNA, and causes hazardous effetcs in various tissues and organs.
